Guinness Beef Stew

Good evening friends,

It worked!
If you read my last blog post you’ll know I was toying with the idea of making this dish in my Dutch oven from my Autumn Fab Fit Fun box.

This was the first time I made this one pot, Dutch oven stew, I was intrigued but unsure of the outcome.
Oh my goodness, this stew was thick, tender and absolutely delicious with a smokey sweetness.
Mix it up this season and give it a go



Prep time 15 mins
Cooking time 1 hour and 20 minutes
Serving 4

Ingredients
• 220ml (1/2 can) Guinness
• 400g cubed beef in 2inch cubes
• 50g dark chocolate
• 3 large carrots, peeled and cut into small slices/chunks
• 2 large parsnips, peeled and cut into small slices/chunks
• 2 large potatoe washed and quartered
• 3 heaped Tbsp plain flour
• 1 large onion, diced
• 2 cloves garlic
• 2 Tbsp Olive or vegetable oil
• 2 Tbsp Worcestershire sauce
• 1 Tbsp tomato paste
• 1 cup beef stock
• 1 Tbsp soy sauce
• 1 Tbsp light brown sugar
• 1 Tbsp fresh thyme (chopped)
• 4 sprigs of parsley (chopped)
• Salt and pepper to season

Instructions
• Heat oil over med/high heat in a dutch oven.
• Cook beef cubes for 4 minutes, then set beef aside on plate.


• Saute the onion and crushed garlic for • 3 minutes. Then stir in the tomato paste, and turn down to a low heat to simmer


• On the set aside beef, seive the flour onto the cubes to combine the juices and flour, this will give a paste like consistency.


• Next add Guinness, stock, soy sauce, Worcestershire sauce, brown sugar and chocolate, to the Dutch oven and stir well for 5 minutes.
• Add the flour coated beef and stir well.

• Pop on the lid and leave to cook on a low to medium heat for 40 minutes.

• Gradually fold in the carrots, parsnips, potatoes, thyme, and  parsley.
Cover and simmer for an additional hour.

Serve this hearty flavoursome stew and enjoy either alone or with crusty buttered bread.

Saturday stroll, Carisbrook, The Tennyson Trail and Gatcombe

Good afternoon friends,

Yesterday morning/early afternoon, my fiance and I set off for a stroll

We didn’t anticipate such a long walk, but as the weather was so beautiful we decided to make the most of it.

We packed a lunch along with a flask of tea, wrapped up in layers, and set out for our trek. We walked from,

Carisbrook to the Tennyson trail to
Bowcomb down, towards Gatcombe, back through Carisbrook and into Newport.

Here’s just a few pictures from our journey

To walk for hours without a destination, to just chat, no distractions, getting exercise and taking in the glorious views, it was wonderful.

We ended up walking 13.6k, my legs definitely needed the stretch, and my chest the fresh air.

We passed less than a dozen people and a few dogs, spotted 2 robins, a sparrow, buzzards, a pheasant, sheep with their lambs, and a festival of birds singing in a tree.

The last few miles of the walk, the trees bowed over is along the tunnel path, I felt as though we were hobbits leaving The Shire.

There were dozens of exposed roots, with burrows, perfect for small creatures, as well as what I expect were rabbit or badger holes around them.

We were tempted to walk around Carisbrook castle before we heading home, though we could hear the families and dogs barking, and decided to take a different route as it looked a little too busy

Forever thankful for our Island, and cannot wait for Spring right around the corner

Totland Bay, Headon Warren Saturday Stroll

How is this weekend treating you so far?

Yesterday was glorious, almost Spring weather.
The sun was shining, I was warm and ready to stretch my legs. My fiance and I (warms my heart every time I say that), packed a picnic, a flask of coffee and drove out to Totland Bay.

Forgive me, I talk about the Island, (Isle of Wight), as if you know exactly where I mean – below is a lovely picture I found on Google of a map of the Island (Totland is the far left, under Yarmouth)

As we walked up hill, we passed a few dog walkers, and I could hear a group behind us.

I could feel my chest tighten at one point, we were walking up hill and chatting away, so my first thought was that I was feeling a bit unfit, we slowed down but I could still feel a bit if pain

The group were walking about 30 or so meters behind us, the paths were long and twisted, most of the time I couldn’t even see them, just hear them in the distance, then I realised my chest was tight because I was anxious.

I think where I only leave the house to do food shopping, to leave the house and be free to explore, to hear and see others around me without a mask, I guess subconsciously it made me uncomfortable.

It was a bizarre feeling, I was out in nature with my love, enjoying our exploring, and then reality hit with what the world’s gone through the past year. It happens, for anyone who’s felt the same, take a minute or 10, a deep breath, remember all the good that’s around you, and carry on.

I realise this is an over-share, but let’s be realistic, we’ve all done it and I couldn’t stop laughing …

The wave of anxiousness subsided, but then the realisation of how much I needed the loo hit.
I’m not going to lie to you, this happens.. and when nature calls, friends, sometimes you have to pick a spot, and pee behind a bush!
The views were glorious, but I was distracted by not only finding some bushes to hide behind so I couldn’t be seen, cursing myself for wearing tights, and preying some creature didn’t crawl up and bite my backside. How bloody awkward.

Anywho, that happened, my other half kept a look out and I wasn’t caught.

We made it to Headon Warren and took in the spectacular views, I haven’t visited here for years and forgot how beautiful the view was over the Needles.

We sat and had a little picnic on the beach which consisted of, Mixed cheese’s and meats on home made sour dough, chocolate chip cookies and cocktail sausages

Little collection of stones – I pick a few favourites and take them home to display in a glass jar – I do this every time we go to the beach

Two ladies to the right of us braved the calm waters for a swim, it looked freezing but they were laughing and had huge smiles on their faces for the time they were in the water.

It was lovely to just breath in the sea breeze, listen to the waves crash and relax.

We made our way back to the car by walking along the seafront, it had started to get alot busier, there’s always one or two who think they’re more important than others.

Even if social distancing wasn’t applicable, if you’re passing another party, move to one side, instead a group but 5 stood side by side strolling past others whilst they pressed themselves up against the wall to keep a bit of distance between them. The same walking up the cliff stairs, groups stopping and chatting mid step… Could you not?

We made our way up and back along the path smiling back at home owners sat in their gardens enjoying lunch with the radio playing.

Our looped walk of 3 and a bit miles was refreshing, I really need to get out more.

Make up Declutter, clean and organise

Good afternoon friends, and Happy New Year!

This morning I decided to declutter and clean out my make up drawers.
Last year I wore hardly any make up, and when I did was drawn towards the same couple of palettes.
I love watching these videos on YouTube, and thought no time like the present.

I bought my make up drawers about 4 or so years ago from Amazon for around £40

6 tier/5 drawer clear make up drawers (Kardashian inspired, let’s not front), are easy to clean, store, and came with 3 sets of clear sturdy drawer dividers.

Cosmetic Organiser Drawers

From the bottom to the top, each drawer I’ve emptied out, wiped down, and repacked getting rid of any out of date, dried out, or products that have hardly or will never use, with a before and after photo.

1st drawer – Eyeshadow palettes

2nd Drawer – Foundation/concealer/cheek tint/highlighter palettes/bronzers/blushers

3rd drawer – Liquid matte lips and lip pencils

4th drawer Lipsticks

5th drawer Lipglosses/eyeliners/mascaras

Top Tray – Setting powders/beauty sponges/lip balms/lip scrubs/liquid highlighters

For the final drawer, I rearranged, wiped down but only got rid of 2 setting powders and added a few beauty sponges that I didn’t have room for.

All together I got rid of –
3 eye shadow palettes (one out of the picture as smashed)
3 highlighter palette
2 setting powders
7 lipsticks
5 matte Liquid lip
10 lip glosses
1 primer
1 liquid highlighter
3 eye liners
1 lip liner
7 single eyeshadows
1 single blush

I feel better knowing I’m using make up that won’t harm my skin or take up unnecassary space on my desk. (Even if I said goodbye to some of my favourite discontinued NYX lipsticks)

Blogmas 2020

Blogmas – Ginger breadhouse

Good evening friends,

Christmas night, my partner and I, decided to construct our gingerbread house.
I had bought the house a few weeks ago from B&M for £5, which included a bag of white icing, multicoloured sweets, candy sails and candy canes.
I picked a couple more packs of sweets to decorate, and eat on the way.


For years I’ve wanted to play the Christmas hat drinking game.
A Christmas hat is placed on the TV – whenever a Character lines up with the hat to look as though you are wearing it, you have a drink.
We chose Die Hard, and yes, it IS a Christmas Film.

Well, for the duration of the film I had a drink or icing bag permanently attached to my hand.



Constructing the house was a bloomin challenge.

Yes we may of had a fair few drinks, but the sides of the house had crumbed in the box, which we knew would cause an issue when constructing.


The final product (during the few seconds it stayed together)

Yes the resemblance is uncanny


We decided to make the crashing house look deliberate, and eventually poured ourselves into bed at 1.30 in the morning.

The house went straight into the bin the next morning, safe to say it was memorable and a good laugh, maybe it’ll stand for a few minutes next year!

Blogmas – Christmas Spiced Chocolate Cake

Good afternoon friends,

Today I’m sharing a recipe, one that I’ve made before, but will no doubt become a new Christmas tradition.

This Christmas Spiced Chocolate Cake, can be prepared, baked and decorated in just over an hour. A simple recipe, with the most delicious smooth, light and flavoursome cake.

Although Nigella labels this a cake, I wouldn’t personally, as it’s flourless and doesn’t have this consistency, I would say it’s more of a gooey spiced pudding.

Christmas Spiced Chocolate Cake

Recipe

For the cake

  • 150 grams chopped dark chocolate (I used 1 while Terry’s Dark chocolate Orange)
  • 150 grams soft butter
  • 6 large eggs
  • 250 grams granulated sugar
  • 1 teaspoon vanilla extract
  • 100 grams ground almonds
  • 1 teaspoon ground cinnamon
  • 1 pinch of ground cloves
  • zest of 1 clementine (or satsuma)
  • 4 teaspoons instant espresso powder
For the topping

  • juice of 1 clementine (or satsuma)
  • 15 grams butter
  • 1 tablespoon caster sugar
  • ¼ teaspoon ground cinnamon
  • 50 grams flaked almonds

Method

  • Take anything you need out of the fridge to bring it to room temperature. The only truly important thing, however, is that the eggs aren’t cold, so if they are, just put them into a bowl (I use the KitchenAid bowl I’m going to whisk them in later) and cover with warm water for 10 minutes
  • Preheat the oven to 180°C/160°C Fan/gas mark 4/350ºF. Butter the sides and line the bottom of a 23cm / 9 inch springform tin.
  • Melt the chocolate and butter together in a heatproof bowl, in a microwave according to the manufacturer’s instructions, or suspended over a pan of simmering water, and set aside to cool slightly.
  • Beat the eggs, sugar and vanilla together until thick, pale and moussy. They should have at least doubled in volume, even tripled. If you’re using a freestanding mixer, as I do, this is effortless.

  • Gently fold in the ground almonds, cinnamon, cloves, clementine/satsuma zest and espresso powder, taking care not to lose the air you have whisked in, then, finally, pour and scrape in the melted, slightly cooled, chocolate and butter, folding gently again.

  • Pour into the prepared tin and bake in the oven for 35–40 minutes, by which time the top of the cake should be firm, and the underneath still a bit gooey.

  • Remove from the oven, and sit it on a wire rack, draped with a clean tea towel, to cool completely.

  • To make the topping for the cake, put the clementine/satsuma juice into a small, preferably non-stick, frying pan with the butter, sugar and cinnamon and melt everything together, then let it sizzle for a minute or so and begin to caramelize before adding the almonds.
  • Stir everything together, and occasionally tip the pan to keep it all moving; what you want is for all the liquid to disappear and the nuts to look shiny and be coated thinly in a fragrant, orange-scented toffee.

  • Remove to a plate and cool.
  • Unspring the cake and transfer to a cake stand or plate; I am brave enough to take it off its base sometimes, but don’t if you’re scared. Remember this cake, however intense and elegant within, has a rather ramshackle rustic appearance on the outside.
  • (My cake was curved at the top and a bit crumby, I flipped mine over, which I think looks more enticing)

  • Scatter with the almonds, mainly letting them pile up in the centre of the cake, but drop a few here and there all over the top. And serve with the cointreau cream.
  • My cake did not look anything like the picture, it wasn’t as ‘stable’, but it tasted like a dream. I dropped off slices to family, and to our neighbour with a variety of double cream, whipped cream and custard.

    FabFitFun is a quarterly subscription box where you can receive, 8 full sized home, fitness and beauty products.

    1 seasonal box is delivered every 3 months for $49.99 (around £60 including delivery to the UK), with a value of over £200

    You have the option to pay for the yearly subscription of $179.99 for the 4 boxes.

    I have decided to pay seasonally, and used a £10 off discount code (just Google it they’re available everywhere).

    Each box comes with a magazine explaining what charity they are working with that season, interviews, product breakdowns, and a few discount code cards for your first order, for wines, hello fresh, and florists.

    ‘Basic Members’ like myself, can customized 3 of my 8 products.

    For each customised item, you are given around 4 options to select the item you want.

    You do have the option to hand pick a few more of the items, although I think it takes a bit of the fun out of it, as I love a surprise.

    I have seen comments on the forum and YouTube videos of customers complaining about the products theyve received, but at the same time, if you have the option to chose a few of the select items, and you decide not to, then you can only blame yourself for being disappointed.

    For my first customizable item, I had the choice of a back pack, tote bag, hair curlers or the styling cream.

    I didn’t realise certain items aren’t able to ship to the UK, I was so bummed out, but then watched a few YouTube videos and confirmed id made the right choice.

    I’m not overly keen on highlighters. I know they’re ‘all the rage’ nowadays, but I don’t see the hype. I may use this as a highlighter eyeshadow duo to get more of of the product. No doubt the shimmer is beautiful, as well as being Paraben Free, Sulfate Free, Phthalate Free and Aluminum Free

    I absolutely loved my first FabFitFit box, it seemed a little pricey at first, but I’d much rather pay for 1 decent seasonal box, rather than 3 monthly ‘so so’ boxes that are filled with delux mini’s

    I was shocked at the total of the box when I added it up, although It is worth keeping in mind that as any subscription box, well any products you buy in general, the price will always been increased slightly due to RRP

    Blogmas – Advent Airwick Scented Calender

    Good morning friends,

    I’ve been on the look out this year for advent calenders that aren’t just chocolate and beauty products.

    To find a decent ones that you’d actually want to buy are few and far between, as many are over priced, filled with cheap tat with a logo slapped on it…

    For example the RRP £25 Friends Central Perk ‘Memorabilia’ 24 day calender – Filled with stickers, pencils, erasers etc.

    IMO looks tacky and disappointing for any Friends fans.

    Anywho, back to it!

    What a wet and windy, yet wonderful autumn night.

    Autumn/Fall for me is all about Comfort, your home and clothes become a little cosier, embracing the dark nights and chill in the air, and having some much needed downtime.

    Here’s a few of my autumn essentials.

    Until last year I never understood the hype of ‘Pumpkin Spiced Lattes’ – and then I got hooked.

    I’m not really one for flavoured coffees, but they give that extra warmth this time of year.
    Whilst in my local Lidl, I spotted the Beanies Pumpkin Spice instant coffee.

    Oh my! It’s been just over a week and I’ve finished a jar. I went back to grab another jar, and picked up Cinder toffee, Caramel popcorn, Nutty hazelnut, Irish cream

    I’m all about candles, each season brings a different scent. This year I hunted high and low for spiced candles. Finally I found them in B&M, and how cute are they? And yes, due to the many unsuccessful trips trying to find them, I picked up 3 of each.

    I picked up this lipstick thinking it was black, but it is actually a deep navy. Not a shade I’ve worn before but definalty one I’ll be trying this season.

    20 matte shades for £7.99, that equals 0.39p each. Bargain! Plus all the shades are beautiful, the bright purples and orange may be a little tricky to pull off but I’ll do my best!
