My 30th Birthday

Good Afternoon Friends!

Yesterday something exciting happened, it was my 30th Birthday!It wasnt the day that had been planned originally, but it was still wonderful all the same.I woke up with birds singing, the sun shining, and messages from loved ones.

My boyfriend was preparing breakfast, so I decided to do my morning yoga routine and have a shower. There is nothing more refreshing!

My boyfriend’s so thoughtful, I came into the living room to find bacon and cream cheese bagels and bubbly, with The Sex and The City movie ready to play in the background.

What more could you want for your birthday?!I had a super chilled morning relaxing and doing my nails.

Midday hit and my family video called to sing Happy birthday whilst my boyfriend brought out my birthday cake.

They’re all so thoughtful!

After possibly too much cake, we went for a stroll, it was lovely to stretch our legs, get some fresh and and feel the sun beating down on our skin.

Side note – I was feeling creative the night before my birthday, so decided to liven up my hair a bit. I dyed it dark red, cut in a long fringe and layers. My hair feels so lighter and bouncier for it.

When we got home a few friends called to drop off presents separately,I said thank you and waved from down the road, because obviously we are social distancing!

Also one of my closest friends Katie dropped off a Giant Chocolate Cupcake.

How beastly does that look???

My other half made one of my favourite dinner’s, Seafood gnocchi. Oh my goodness, I dont know how he does it?

After dinner and a few drinks, and an incredible pamper session, we got into bed to snuggle down and watch a movie.

Even thought my 30th birthday wasn’t spend the way we had planned, it was wonderful and I’m incredibly thankful!

My countdown to 30

Good evening friends,

My apologies for the lack of posts and interaction… I’ve been a busy woman! A busy but very thankful woman.

I am currently sat waiting in the nail salon waiting for a manicure, and thought whilst I wait an have some downtime, why not blog?

So, next April I turn 30 years old… 30!

I’m now at the point of counting down the last couple of months in my 20s.

There has been some ups and down, damn, let me tell you, but, I’ve learnt alot, I threw myself into all kinds of situations, because why not? As long as you’re not hurting anybody, go live your life, and to the fullest!

I’ve had countless new experiences, and can thankfully say that I have no regrets. In hindsight I could if done something’s alot differently, but I doesnt matter. Not every experience has been pleasant, but theyve helped to sculpt the person who I am today.

My 20’s have been full of excitement, and I know that it doesn’t have to stop when I get to my 30s, but, some things can just fit better into a period of your life, which got me wondering…. what do others wish they’d done in their 20’s?

So friends, this is my question to you.

If you’re in your 20s then please still let me know what you have coming up? And those in their 30’s plus, please share with me what you’re thankful that you did in your 20’s, and what you wish you had?

Snickers Birthday Cheesecake

Now who says that a birthday cake has to be a sponge cake?

It’s a well known fact that I’ll cook and bake for just about any occasion, so when one of my friends birthdays is on it’s way, I’m prepared!

Since I knew my friend had a love for cheesecake and Snickers, well I put my hands together and here we have it.

This rather naughty cheesecake is not for the faint hearted, or one who is counting calories.
I made this cheesecake early morning, the day after we had got back from our London trip, and in bit of a rush as we had a full day ahead of us, so I didn’t write down my recipe.

I’d love to share this recipe with you, but you see, I went rogue, it happens alot, and didn’t follow one as I couldn’t find one I liked. Also, I also feel as though the base is never thick enough…. So I doubled it. But here’s a rough idea of what I used.

I made the base by breaking up and conbining chocolate digestive, melted butter and chopped up Snickers.

I then whisked the cream cheese, vanilla extract and icing sugar together and then folded in Snickers. And of course, decorated it with, any guesses? More Snickers!!!

I refrigerated the dream that was my cheesecake for one hour before serving it to the birthday boy and friends.

It went down a treat, and was demolished by the next evening.

Next time I promise will make note of the measurements of the products I use, even when I’m going rogue!

This was such a quick and easy cheesecake to make, and without tooting my own horn, possibly the best cheesecake I’ve ever eaten!
