Who doesn’t love a good bit of shortbread?

Today is national Shortbread Day, so I thought I’d I make up a batch, and for the first time! How is that even possible?

I found this super quick and easy recipe, using only 3 ingredients, making between 20 and 25 shortbread fingers.

Method

  1. Heat the oven to 190C/375F/Gas 5.

  2. Beat the butter and the sugar together until smooth.

  3. Stir in the flour to get a smooth paste. Turn on to a work surface and gently roll out until the paste is 1cm/½in thick.

  4. Cut into rounds or fingers and place onto a baking tray. Sprinkle with caster sugar and chill in the fridge for 20 minutes.

  5. Bake in the oven for 15-20 minutes, or until pale golden-brown. Set aside to cool on a wire rack.

I used a traditional recipe but made them my own by using a Batman cutter. The shortbread were bigger so this only made about 15, and for a little something extra, I covered a few in dark chocolate. I’d definitely reccomend it if you havebabnextra sweet tooth.

  1. Shortbread my favourite and I recently made some. I plan to make more and cut them this time for a change, as I usually just but on a rectangular baking tray and cut in fingers.

      1. I’m having a good day thank you. I hope you are too.
        The sun is shining here and making my flat nice and warm. But I have had to close the curtains with watching a dvd, otherwise I couldn’t see it, with the sun blinding me. 🙂
